I have to admit they're a bit of a PITA to prepare, and take quite a bit of patience (ie. a whole shovel load) to get them right.I peeled and trimmed, trimmed and peeled, and…then I had a pile of peels and trimmings and nothing left in my hand!
At one stage, about 15 years ago, I had 3 or 4 artichoke "amuse bouche" on my catering list, including bacon-wrapped artichoke hearts.
Then someone asked for 100 portions, so I had to peel, prepare and cook about 20 kilos of the damned hairy things.
After that, I reserved the bacon-wrapped delights for family reunions - no more than 6 people
