Then, there's Buffalo wings, marinated in a mix of hot sauce and melted butter, then grilled baked or fried. Recipes abound. Served with celery and carrot sticks, with a Bleu cheese dipping sauce.

I've never posted it, but we have a recipe for wings from a coal fired pizza local chain place. Marinated in garlic, rosemary, parsley, lemon juice, EVOO, then cooked in the ovens they use for the pizza, served mixed with a bunch of caramelized onions and strips of rosemary Focaccia. I can copy and paste recipe if anybody wants it.

When I was a little kid I always got stuck with the part that goes over the fence last. I'd rather have that than chicken feet any day. I think that's every grandma's favorite part. My husband's grandma and his aunts used to stand in the kitchen and fight over the chicken feet, he was appalled by it, LOL!

The overall process is to parboil the wings, which renders out a good bit of fat, allowing the wings (which get tossed in some light seasonings and oil) to get very crispy in the oven without the meat drying out.

The sauce is simply a 50-50 mix of hot sauce and butter. Let me know if you want the incredibly simple recipe.

MrsT (who had eaten more wings by the time she was 15 than most people eat in a lifetime) says this is her preferred preparation, declaring “These are as good as the Dry Dock!” - her favorite hometown dive bar that specialized in wings.

They’re not as good as the Dry Dock, but they’re about 98% as good as the Dry Dock, and a helluva lot easier to make.

All this reminds me…the very first time I ate a meal at MrsT’s parents’ house (she lived there, too) was for her birthday, in 1988, and I “helped” her dad make hot wings (deep-fried outside) while her mom made pork-and-sauerkraut.

But I have tried googling gluten free biscuits and gravy in the US and it was a massive fail 😂
