Chips, French Fries, Wedges and Any Other Hot Stick Shaped Potatoes

I read yesterday that France is ditching its traditional French Fries in favour of British style chips. Sales are up 25% in one year and farmers are struggling to keep up with demand.

Now as a Brit chip fan I'm happy about this, I'd take a triple cooked gastro pub chip over french fries any day of the week.

It might surprise some to know that the French already eat more Fries and Chips than the UK by a long way.

So it got me thinking, what are your favourite types of chips, how do you like to cook them and how do you eat them?

No judgment here. If it's carb on carb between two fat slices of white sliced slathered in thick butter then whoop whoop! 😆
 
Sometimes thick cut, sometimes thin.
Sometimes sliced.
Generally double fried, but sometimes single fried starting with cold oil (seen Heston Blumenthal do this and he got crispy chips)
They gotta be crispy!

I eat them sometimes plain salted, sometimes spiced with paprika, chii powder & salt.
Sometimes with satay sauce.
Never with mayonaisse or ketchup.

And sometimes different from what I just described :hyper:
 
I really don’t have a favorite…it changes, and it may also depend on what I’m having them with.

I especially like:
Waffle fries (which aren’t stick-shaped, but I’m including them)
Crinkle-cut fries (skinny or thick)
Super-skinny French-fried “straws”
Skinny fries (like McDonald’s)

About the only ones I really don’t care for, to the point that I might not even eat them (and that’s saying something) are really thick skin-on potato wedges.
 
Favorite dips are (in no order) ketchup, curry ketchup, mayonnaise, some sort of ketchup-mayonnaise mix (aka fancy sauce, thank you Stepbrothers), sour cream, and any number of specialty dips - one place around here serves their fries with a trio of dips: creamy Parmesan, spicy garlic mustard, and sage-pesto mayonnaise…love them all.

In my very local area of SW Ohio, tartar sauce is the preferred dip for fries. About the only dip I don’t like for fries is barbecue sauce.

Just to clarify it’s not about favourites singular it’s plural - just what you like the way you like it. I like many different types of chips, but I am with you on those fat dense wedges that have little crispness and no fluff!

So Jo-Jos are out. I am not a fan of thick wedges, either.

I like fries plain with salt and pepper for the most part. I don't like limp fries, they must be crisp. The crispier the better.
 
I also like homemade oven fries, I post them here regularly. I spice them with cajun mix and rosemary, or if it's red potatoes I will use rosemary, thyme and garlic.

And crispy but soft centred spicy potato wedges are a favorite too.

My favorite sauce is definitely mayonaise, but garlic sauce or aioli is a good second. I don't like satay sauce on my fries.
 
Hmm I forgot curly fries. Will have to amend the title 😂
I’m not much of a fan of curly fries - I find them rather confusing to eat, and most curly fries sold around here are pre-seasoned (whether fast food or frozen store-bought), and I’d prefer they not do that.
