Chips, French Fries, Wedges and Any Other Hot Stick Shaped Potatoes

My only issue with that (because Felicity is generally painstaking in her research) is that: 1) rinse the chips thoroughly 2) blanch the chips 3) fry at 120C until soft 4) remove, pat dry and refrigerate 5) finish until crisp and golden 6) thermometer required.
Waaaayyy too complicated!

Yesterday Mr SSOAP asked me what my DJ handle would be, I replied Miss Potato 😂
Hmmm, that doesn't exactly fill the listener with enthusiasm lol. What have we to look forward to? Potato themed folk songs? Not many out there I'd think. I'm sure TastyReuben could rework lyrics to existing songs to help you out with that.

Miss Potato? A lot of variety from the popular chip tracks to La Bonnotte Fondant, what a gal 😉
 
I’m thinking of reworking Eye of the Tiger and calling it Eye of the Tater. 🥔:laugh:

Yep, you're absolutely right!
The photo I posted of "my perfect chips" was taken in Rye, Sussex - I think 2015. I drove down to Rye with my bro and my wife and we ended up in Marino's Fish bar. The bloke that ran the kitchen was Lithuanian, or Latvian, or something. My bro, who was a chef all his life, declared that the chips were the best ever, and we asked the cook how he did them.
5 minutes at 160C/320 F. Take them out , let them drain then re-fry at 190C/375F.
