Well it is called 'How To Fry Perfect Chips' not 'How To Make Chips Fast’!My only issue with that (because Felicity is generally painstaking in her research) is that: 1) rinse the chips thoroughly 2) blanch the chips 3) fry at 120C until soft 4) remove, pat dry and refrigerate 5) finish until crisp and golden 6) thermometer required.
Waaaayyy too complicated!
