Chips, French Fries, Wedges and Any Other Hot Stick Shaped Potatoes

Wait--do you mean you cook 2kg of potatoes at Christmas, but are there no leftovers? They don't actually eat all of them, right?
You might be amazed at how people devour roast potatoes. About 15 years ago, when my kids were still here, we used to do a Xmas lunch. I distinctly remember peeling 15 kgs of potatoes for about 25 people and my wife hiding a portion so I could at least eat some.
We'd do a huge roast turkey, Brussels sprouts, carrots, roasted beetroot, and a pile of desserts.. but the potatoes were sacred!

Growing up here, it would have been a combination of skillet-fried potatoes and mashed potatoes, depending on the meal.

I still think back with awe and appreciation at how much work my mom put in cooking for us all when we were kids, anywhere from 7-10 people a meal, three meals a day for a lot of that, every day - and we ate potatoes every single meal.

My biggest memory of my youth is trudging up and down the small hill to and from the root cellar with a 5-gallon plastic bucket, muling potatoes up from cold storage.

I’ve considered buying a mechanised potato peeler for my family’s potato needs but 7 everyday, well I would’ve just cried 😂

My only issue with that (because Felicity is generally painstaking in her research) is that: 1) rinse the chips thoroughly 2) blanch the chips 3) fry at 120C until soft 4) remove, pat dry and refrigerate 5) finish until crisp and golden 6) thermometer required.
Waaaayyy too complicated!
