Chips, French Fries, Wedges and Any Other Hot Stick Shaped Potatoes

I like fries plain with salt and pepper for the most part. I don't like limp fries, they must be crisp. The crispier the better.

I think that’s why I don’t like french fries. They promise so much and are so disappointing if they’re not very hot n crispy!

When I go to a restaurant and actually order fries (more often than not I don't order them because it's too much food) I tell them, "Burn 'em."

Also, who orders fries for take-out? That's a setup for disappointment because by the time you get them home, they are limp (if they were ever cooked properly to begin with) and an air fryer helps a little bit, but mostly they just aren't the same upon reheat.
 
I’m not much of a fan of curly fries - I find them rather confusing to eat, and most curly fries sold around here are pre-seasoned (whether fast food or frozen store-bought), and I’d prefer they not do that.

Mostly I’d agree but I am partial to M&S curly fries.. with extra seasoning 😂

It’s how long they hang about before reaching you thats the killer, that and the way they steam themselves on the plate and cool down faster than the rest of the food.
Eat the fries first and fast or leave ‘em!
It’s not a reliable thing to order over here. Cold or soft fries are for me a massive joy killer.

Arby's Potato Cakes, think Hash Brown triangles (which they no longer offer)
I've recently found Ore-Ida Golden Crispy Crowns (we had some with last night's roast chicken)

Tartar Sauce
Thousand Island Dressing
Honey Mustard Dressing, the real thick stuff

and this is something my sister and I would do:
there was this local diner just down the street from our home back in Kaneohe; whenever we had enough money between the two of us, we'd go and have lunch - we'd share a burger and fries plate and each order a malted milk shake (that's how antient I am) - chocolate for her and vanilla for me - and DUNK our fries in the shake - AH YUM!!! Back in the day, shakes were so thick, you couldn't use your straw until it melted a bit :love: and you always got the little extra that was left in the SS mixer cup
 
As to getting soggy fries out, that’s one thing I like about a local chain sandwich shop - you order your sandwich and fries, and you can watch the fry guy pick up a giant russet potato, put it on one of those 100yo wall-mounted fry cutters…WHACK!!!…out comes the potato pieces, and then into the oil. They’re too hot to eat when they hand them to you, still bubbling and popping.
 
I'll usually make wedges since I'm typically to lazy to precisely slice a load of French Fries. These will be briefly boiled before being fried. Usually I like to dip them opposed to slathering condiments all over; sometimes I just want the salty taste. Mostly ketchup but sometimes mayonnaise, or just lemon pepper seasoning, just salt, mayo and ketchup mix, and sometimes gravy. There are times too when cheese, chili and cheese, just cheese, just chili, with or without a sunnyside up egg works too.
