Does refrigerating potatoes change their taste?

I do know that mayo likely has sugar in it, but I don't want it sweet, please do not taste sweet, dear mayonnaise.
Me neither. I grew up with Hellmann’s (which amazingly I’ve only just learnt the correct spelling of 😂) so that was my starting base, it’s not a particularly sweet mayo but anything sweeter than that makes me wince!
Nowadays I mostly make my own so I can avoid the sugar altogether.

I want to make mayonnaise but if I do it will end up being vegan. For some reason, I can eat the commercially made mayonnaises with eggs in them but the idea of blending mayo with raw eggs in it makes me squeamish. I've no idea why. Oh, and no aquafaba either.

Better get back to potatoes.

Funny the little quirks we all have isn’t it. You can eat a runny poached egg but the thought of blending it in oil just has something about it that make you say NOPE! 😂

It's the whites, they must always be set in my poached or fried eggs with not a bit of uncooked white part, but then again they can't be browned at all when fried, either. I suppose I could use just yolks in the mayonnaise and I would be okay with that. But to completely separate the whites from the yolks without a bit of clear snot attached might be hard to do.

We are so going to get in trouble if we don't get back to potatoes.

I only use yolks. Yes the lasts bit of white is harder to remove but the yolks don’t have to go in whole so you could potentially grip the snot cord and shake the yolk contents in, disposing of the sack remnants in the bin 🤷‍♀️

On potatoes the heat makes a huge difference to the speed they degrade. A boiler cupboard is where you’d typically put your seedling to help them sprout, just no-ones told the potatoes germination isn’t for them 😂

No, but... Along those lines a *lot* of produce we buy is "treated" to not sprout so it will sell or if it does sprout it won't grow all the way and will be stunted and slow. A good place to get 'taters is here.

I'm not really sure my yard and soil would sustain them so I'd rather not buy anything to try...but when I've had potatoes that were sprouting in the past I've wondered.

I’m under the impression you can grow potatoes from any potato including supermarket ones (well in the UK at least) but the big potatoes need to be cut up first. Or something like that 🤔 Hopefully SatNav will be along in minute to clear up the potato quiz questions.

Well I wasn't planning on wasting a whole potato. I would cut the eye and sprout out.
 
But, I don't like the texture and flavor of potatoes after they have been stored raw in the refrigerator
I've noticed that cooked potatoes, reheated, or fried the following day, have a weird taste. Have you noticed that?

Me too. Uncooked whites - yuk. Runny yolks - ok.

You don't need to cut big potatoes up if you don't want to. Typically they cut them up and allow the open end to dry out before they are planted. It has to 'heal' else it disintegrates or decomposes in the soil.

The only reason for dividing large potatoes up is to make them go further and supposedly get more tatties from a single tuber.

I typically buy fresh seed potatoes because they're less likely to have diseases that carry from farm to garden that way, plus in not really interested in growing the bog standard supermarket veg, I'd rather have something with taste or a different colour like my purple Congo potatoes that are purple ask the way through the tuber and make a fantastic blue mashed potato.
