Egypt grow milllions of metric tons of potatoes a year (something like 7 million) and china recently joined in growing potatoes in desert conditions. I remember seeing ‘Egypt’ on the front of a packet of salad potatoes and thinking how?Potatoes don't grow well here. I think it's too hot, or maybe the termites eat them before they can grow.
Sweet potatoes do well
I don't put potatoes in the fridge. I feel that the starch in the potatoes turns to sugar and the potatoes taste sweet to me. Don't like sweet mashed potatoes. Glad it's not just me that feels that way.But, I don't like the texture and flavor of potatoes after they have been stored raw in the refrigerator. I have noticed a difference in the flavor of mashed potatoes, slightly sweet, and I don't like sweet starchy stuff much (which is one of the reasons I don't like sweet potatoes or yams). Seems like hand-cut fried potatoes don't come out as crispy after being kept in the refrigerator. But my whole life everyone I ever knew kept potatoes in a cool, dark place so that's what I have always done (except for the few times I put them in the fridge and later regretted it). I have a spot in my pantry where they go.

Apparently (if I’m remembering correctly) so long as the day and night temperatures are significantly different they will grow.
I also remember reading they coloured them with mud after harvesting for western markets because being grown in sand meant they were unnaturally white!
It was just an example of growing in extreme environmentsEgypt is at the other end of the continent....
