Eggs

I love eggs. I raise my own chicken eggs.

Duck eggs are even better - that yolk is so much more creamy in texture! I can sometimes get them at farmers' markets.

I love: omelets (which have to include at least cheese), poached eggs, soft boiled eggs, properly scrambled scrambled eggs (NO Gordon Ramsey eggs for me!), sunny side up or over-easy fried eggs. Hard boiled are typically for road trips while driving. Eggy quiches are great, too, but crustless is preferred. Quail eggs are best for pickling.
 
Eggs are the Swiss Army knife of the kitchen ingredients. i eat a lot of eggs. maybe more than i should. my go-to quick meal is a bowl of hot white rice, a fried egg on top, and a sprinkle of seaweed flake and a drizzle of soy sauce.

another favorite is a MocoLoco. A Hawaiian favorite. eggs, rice, meat, and GRAVY. I made a chicken variation once.

I haven't had a Loco Moco in ages.
My all time favorite is from Rainbow Drive In in Honolulu

Rainbow's gravy is probably the best, but I like Zippy's Mac Salad better.
On this trip back home we must have gone to eat at Rainbow's at least 5 times in the course of a month long visit.
 
I came across this today which I found somewhat strange:

Substitutions [for eggs]​

1/4 cup egg substitute = 1 large egg;
3 small eggs = 2 large eggs;
2 tbsp egg substitute = 1 egg white;
2 tsp sifted dry egg white powder + 2 tbsp warm water = 1 egg white;
2 tbsp dry, sifted egg yolk powder + 2 tsp water = 1 egg yolk;
1/2 of large egg = 2 tablespoons of one large egg (beat first!)
