Getting out of a cooking funk

You have had so much on your plate recently, well tbh it seems you’ve more than your fair share of hassle all year, you must be exhausted.
I wouldn’t be surprised if when your energy levels start to go back up things change.
Well that’s kinda what I’m hoping for myself too! 🤞
Yeah, one of the things I really enjoy is getting those creative juices flowing and participating in the challenges, and it's been hard for me to get motivated lately. This past one I had several really great ideas but I kept getting the wind knocked out of me and in moments where I might have had time to execute, I just didn't have the mental focus to pull it off. Sigh. Like today I have light work and it's mostly remote via computer stuff, so I am peeking into the forum here and there...and realistically I could go in the kitchen in about an hour and bust something out and write it up by 7 but that feels like work, being rushed to submit on time and not fun, so to heck with it.

I did some mystery shop carryout meals yesterday so I don't have to cook, just reheat and eat. One of them is FF from a Chinese chain and I recently found out that I like their chow mein noodles. I always got their fried rice and it's mediocre compared to family owned joints (or my own) and was really happy to find out that the chow mein noodles are awesome! I got a container that has orange chicken, teriyaki chicken, and the noodles. I can get 3 meals out of that. And of course I was quite full from the humongous mystery shop lunch sandwich yesterday so I didn't eat much last night when I got home.

If you have to push yourself to do it (cooking I mean) then there’s not a lot of joy in it is there and what’s the point!

I invited my Pa for Sunday lunch a couple of weeks ago and I woke up thinking I can’t be bothered, cue the most difficult Sunday lunch I’ve cooked. Don’t know how I got it all on the table hot and in a decent state because it’s hard when your hearts not in it.

One of the new markers for me I’m in a cooking funk is I look at the stuff I’m cooking plated up and think about taking a photo to post here then decide meh it’s not even worth photographing.

I’m fairly jealous of your noodles! I love noodles and chinese n noodles are never on the menu due to the damned coeliac stuff.
Just as well I’d probably spend at least half the week eating chinese! 😂

Yeah, rice noodles just don't cut it, do they? No ramen for you either, and that's all the rage these days...surely there are some gluten-free options somewhere?

The closest you can get to a satisfying noodle that sort of works here is a brand called King Soba Brown Rice Noodles.
They have that thicker solid resistance you need but of course it’s still not the same and really I’d just like to be able to order them!
Especially right now 😆

Yeah, I know it's tough for you. I know two other people who have gluten intolerance and went undiagnosed for a long time with horrible side effects. Hopefully the future will bring more tasty options to choose from.

Ah well you get used to it, just every now n then you think I’d REALLY like to eat that 😂
 
Yeah, it would be more often than every now and then I think. How old were you when you figured out/got diagnosed? Had you always had symptoms or did they develop later in life?
Probably always had it but didn’t get real stomach pains until my early late teens/early twenties when the terrible gastro intestinal rebellions kicked off (if you get my drift) but even then I didn’t figure it out until I was in my late twenties after I had my first son and tried to survive on a diet of.. biscuits!

It was hidden by the secondary problem coeliacs get with dairy. So I stopped eating cheese and the symptoms went away (more or less) until years later in my late twenties. I was diagnosed at 30.

So yer I know exactly what I’m missing out on and very occasionally something new will appear and I just imagine what it will taste like, I’m certain my imaginings must be way better than the real thing as it’s always perfectly tuned for my tastes 😂
