I store mine in an old cloth bag, all covered up.
I'd say that, if you've got them by the water boiler, there's probably an inordinate amount of heat around, and that's not good for them.
I'd try and find a colder place without the hot pipes.
When I was a kid, we had an "outhouse" - originally for coal - and that's where the spuds went. My dad would run down to Romney Marsh (in Kent), buy a 50 kg bag and then leave them in the outhouse all winter long.
