Here’s some info on both:

What is the Difference Between Scrapple and Pudding?

With your Cincinnati connection, I’m wondering if you’ve ever tried goetta, which is sort of in the same family.

Goetta - Wikipedia

BTW, the wiki article refers to scrapple as an alternate name, pannhaas - that’s what my FIL usually called it.

My parents and sister love scrapple. I never cared for it. I haven't had it in so long, I don't remember what it tastes like. The name "scrapple" is very fitting, though.

There are people who live the way the PD live in Eastern Texas and Oklahoma. They refer to themselves as Mennonites.

I met a Mennonite construction crew years ago in Pryor, Oklahoma. They didn't use cars/trucks, so the owner of the company sent a passenger van to pick them up every day. The didn't have electricity in their own homes, but did use power tools on the job. I was on the job site, and the craftsmanship was amazing. Every stud was perfectly spaced and straight. One guy was building a huge winding staircase by hand (usually they are factory made and trucked to the site). I kept wishing I could get guys like these to build my next house. That thing would be around in 300 years, easily.

Talking about scrapple, at the deli getting some olive loaf and cheese for tomorrow’s trek home, and I saw south-central PA’s two favorite meats advertised:

The dried beef is what goes into the chipped beef gravy MrsT is so fond of.
