I used the oven-poaching method to do the Eggs, so much easier to make 6 eggs all done at the same time with the same consistency of doneness.

I had a huge plate of bubble & squeak for breakfast, using up leftovers from last night´s feast!

A very "local-style" (reads as from Hawaii-Local) breakfast for us three ... Vienna Sausage, fried crisp, with scrambled Eggs (I know, not Morning Glory style) and some Portuguese or Linguica Sausage Fried Rice and yes I went off the reservation and added Peas & Carrots (Hawaii folks don't normally do that).
Very ONO (that's Hawaiian for delicious)!

Our first breakfast of the New Year was actually made the year before and reheated... It was a picnic breakfast out whilst watching for platypus in the wild.
pikelets, maple syrup, blueberries, raspberries & strawberries with some plant based thick cream. It was served with coffee.
Both breakfast and platypus watching were very successful.

It was breakfast soft tacos, a hash brown patty and guava slices for breakfast this morning.
