Spices you have never used

Speaking of maca root, I have never used it as a spice. I believe I bought it as a coffee sub. But it did not work for me.

It must have stood in the cupboard for months, unused, and then, sadly, discarded.
 
I use a lot of herbs but not many spices. I'm pretty basic and limited, really. Some of those I've never heard of and others just aren't used in dishes I like to cook.

I was looking at the mixed list of herbs and spices, before it was pruned of herbs, so there we go.
I reckon you are ahead of me in the herbs too.
Which is totally fine.

Well dried herbs still counts as herbs. I do prefer fresh when possible. Again, I'm basic. Basil, oregano, parsley, and tarragon are my go-to herbs. I also like dill, thyme, chives, bay leaf, and sage but I use them much less frequently. Not a fan of rosemary and I have some marjoram but I've never used it (maybe 1x). And I use fresh garlic and onion regularly but I guess those are vegetables...

I’m at 24, and am surprised my count is that high, honestly.

I didn’t count sumac, though I probably should, because it’s in a commercial spice blend I used…once.
