What's larrousse??
Colbert is butter creamed with tarragon, parslet and beef extract.
Correction: Larousse. Its a sort of fine cooking bible. A French 'encyclopedia' of cooking.

That's Colbert Butter. Colbert sauce is:
Meat glaze mixed with a little water, butter, nutmeg, tarragon, cayenne, lemon juice, parsley and Madeira.

Its not clear from the menu whether its the Colbert butter or sauce served with the lamb. But I tend to think the sauce makes more sense with lamb chops.

I have a copy of Larrouse and both butter and sauce are listed. The sauce probably is tricky. But I, too, love the sound of it.
