The early stages of a breakfast bahnmito…a breakfast burrito made like a bahn mi: egg, kimchi, cilantro, and bacon for the pork component (plus, cooked in bacon grease). Wrapped in a tortilla, pan fried in bacon grease, and served with a spicy mayo. Probably my favorite variation on the breakfast burrito. Note: the kimchi was made with cabbage and brussels sprouts.

I’m not posting this, but I figured I would share.
 
That’s nearly half what I paid. I suppose I paid extra to have them displayed in a cucumber box. :laugh:
That's okay, I didn't buy green because I paid out the nose for red cabbage 2 days ago. Just don't have time to get to my recipes until Sunday, it looks like. Tomorrow I have to dust, vacuum, clean the guest bathroom, and prep salsa and queso fundido. I did manage to clear a good bit of the clutter off my kitchen counters and wipe them down this afternoon. It is amazing, no matter the size of the kitchen, it's so easy to accummulate clutter!!!

I have two recipes in mind for the challenge. One of them involves using 2 of the challenge ingredients, the other uses all 3. I am pretty sure I won't be making both recipes on Sunday!

Here’s what I made for supper tonight:

Recipe - Beef & Noodles Deluxe



It’s cabbage, onion, mushrooms, and diced roast beef simmered in beef broth, with egg noodles stirred in.

It’s just here to enjoy, as I didn’t use a recipe for once, just winged it, so I have no idea of amounts beyond “a few handfuls of egg noodles, a fair amount of chopped cabbage.”

Okay, I just picked my jaw up off the floor at you not using a recipe!

Looks nice! You used enough egg noodles to compensate for the cabbage. You probably know from my whining and groaning that I am not fond of cooked cabbage, but I would eat that. You should recreate it and write it up.

You know that I don't use recipes and it's always quite a "challenge" for me when I make up stuff for the recipe challenges, LOL. I have to write down what I am going to use and then taste here and there to adjust the amounts I write down, flying by the seat of my pants as I go. Sometimes I have to increase this or that and so my notes are always a mess, LOL! But it's quite satisfying to create your own recipes!

Well it seems that I can enter it because I can't for the life of me find it written up on CB despite references to it as far back add 2012!
 
Recipe - Polish Kraut & Apples

This is a pretty typical meal for us; we have some variation of this a few times a month. When I make this on my own (without a recipe!), I use more sauerkraut and not as much apple or sugar, and I usually use wine instead of apple juice, but I was following a recipe this time, so I stuck to it.

I must say, both MrsT and I were happily surprised. I was expecting this to be far too sweet, and make no mistake, it is sweet, but...it worked very well against the potatoes and the kielbasa.
