I'm okay with cilantro, since, as TR said, there is a lot of time.
Now, I probably won't enter anything because I have that gene that makes cilantro taste like soap.

Ah - that would be fresh coriander (cilantro). What about ground coriander or coriander seeds? To my knowledge they don't have the same issue.
I can tell my ground coriander is really old by the look of the label. It's two or three manufacturer's designs old. It looks kind of retro.The seeds are okay, I guess. I've never noticed any soap taste from seeds. But, then again, I rarely use coriander seeds.

After further thought I've changed my mind. Olives are my new choice. Everyone has some form of olive in the pantry or fridge.
