What about creating a "red" mustard? I am pretty sure someone could show us the way...maybe mustard with food coloring?

I don't think it will be me. Any mustard that isn't yellow doesn't appeal to me. I don't even use that French brown stuff!

I bought this a few months ago as a stop gap in case I ran out of English mustard powder. I'm convinced that it was yellow when I bought it.

Does it taste like English Mustard?
 
Slightly bitter - which I liked. I think its probably a bit like mustard greens as used in Souther USA cooking? @medtran49 might know about that, perhaps.
I only ask because Kale is such a nutritional powerhouse in terms of vitamins and minerals but I absolutely hate the taste. I have not found a way to prepare kale so I like the taste.
