The CookingBites Recipe Challenge: Nov 2015-June 2017

My main thoughts at the moment are that if someone states chicken, then vegan/vegetarians/pescatarians who want to enter the challenge should be allowed an equivalent substitution. So soya/TVP mince for chicken would not be allowed, but would be for a red meat switch. Tempeh would switch with anything, as would Seitan. But chicken flavoured quorn would only be allowed for a chicken or white meat substitution.

If Pumpkin is stated, then pumpkin should be the ingredient. If squash is stated, any hard skinned squash could be used, such as winter squash, pumpkin, butternut squash, but not marrow or courgette which although botanically fall under the same family are not really equivalent.

Dairy/Nut allergies are more interesting issues, as would be a gluten/lactose intolerance and we will just need to accept that milk is anything vaguely resembling a milk style drink. Same for yoghurt etc. Cheese, well there are substitutions but the flavours are not the same however, for vegans we adapt (as do those of us allergic to dairy).

But we can live, learn and modify and adapt as needed.

I'm beginning to think this is a minefield! :D We could debate endlessly about what substitutes should or shouldn't be allowed for fish, meat, chicken or game. Basic soya mince (not the one flavoured to taste meaty), could, for example be used in place of minced chicken or turkey. Quorn make products which are designed to replace minced meat (although obviously the chicken flavoured Quorn would only substitute for chicken). They also make 'sausages' which presumably could be used in a sausage casserole.

Rather than tying ourselves in knots over what should or shouldn't be 'allowed' as vegetarian subs, wouldn't it be easier to simple allow substitutes (for fish, fowl, or meat) at people's discretion. Its not as if we are overrun with recipes! And in the end, are we seriously going to 'disqualify' entries? Its up to the Judge to decide what wins, after all!
 
... and what about Vegusto? https://vegusto.co.uk. They make a wide range of substitutes, including cheese. And also Tofurky, Granose and Granovita products? There may well be other alternatives in the US (Tofurky originated in the US).

However, I hope I didn't win under false pretences with my Pumpkin recipe! :D I used butternut squash to cook it and in the photo :eek:. But I did write the recipe for either!

And the winner decides the next ingredient. At times we've left people out of the challenge, because they don't eat meat(for whatever reason) and we're now being asked to include them in this, by allowing non meat/vegan alternatives where they exist.

A very simple & reasonable request, in the circumstances.

Absolutely! I'm totally backing the use of alternatives. All I was saying is that we shouldn't be too prescriptive about the alternatives we allow. There are lots of possible alternatives to meat, fish and fowl. No problem. Bring them on! :D
 
OK I have added in a new rule which is vague enough to hopefully cover everything/everyone!

  • To include everyone in any challenge, a suitable vegetarian/vegan/allergy free/intolerance free substitution will be permitted if the challenge ingredient is something a participant can not or does not eat, for whatever reason. What is permitted for the substitution is up to the current challenge judge to decide on.

Sounds good to me! In my opinion, if someone who is vegan or vegetarian sees a recipe containing meat, they have a choice of plenty of substitutes, whereas someone who is not vegetarian and can't stand completely vegetarian food can always serve the vegetarian dish as an accompaniment to meat or poultry. Me? I eat meat and poultry dishes as well as vegetarian/vegan dishes - I've even been known to substitute potatoes for meat and poultry in spicy dishes, so it doesn't bother me in the slightest. Just need substitutes for fish and bananas.....:D

I'm allergic to bananas :D
I just hate them! I have a condition called chronic geographic tongue which is basically very similar to a form of psoriasis but in the mouth. The result is that I get blisters and pits which look like the contours of a map on my tongue. It hurts badly and is permanent, generic and the form i have has no treatment. It is equivalent to biting your tongue and then having near vinegar or lemon juice. So anything acidic or alkaline hurts my tongue and can reduce me to tears! When it is really bad it has been known to leave me unable to eat for weeks and unable to drink anything (water included) for days! It has been known to leave me needing IV fluids in really hot weather, luckily many years ago a really good dentist referred me to a major dental hospital who told me that high zinc doses would help to keep it more under control, but I still find anything that I could not eat as a child,I still hate the smell of and bananas are especially smelly and I hate their smell!
