The CookingBites recipe challenge: pickle

Right! Enough procrastination. Here's something cheap, simple and utterly delicious. KKA's pickled onions.
Pickled onions are an institution in the UK; you can find them everywhere. When I sang in the church choir, we had choir practice on a Friday night, at 6pm. After that, down to the chippy, 6d of chips and a pickled onion!
Typically, British onions are pickled in malt vinegar, with nothing else added. When I arrived in Venezuela, I soon realised there was no such thing as malt vinegar, so I had to be creative. White vinegar on its own? Far too bland, so I mixed it half and half with wine vinegar. Red wine vinegar makes the onions slightly pink, and therefore more appealing to the eye.
The other thing about malt vinegar is a slight sweetness from the malted barley. That was resolved by adding sugar and coriander seeds. The other spices ? Well why not!
These onions need to be left for at least a couple of weeks, and even better, a month before using.

Love pickled onions!!! I like to make pickled onions with the Vidalia onions that are grown here.

Here's my second entry: Christmas Pickle/Chutney
It occurred to me that members might have some leftover dates, pears, green apples, etc. from Xmas. Now that might just be a throwback to my childhood. The only time I ever had dates as a kid was at Xmas.
This pickle/chutney is fruity and very mildly spiced; perfect for cold chicken, pork, ham and, obviously, cheese.

1) ingredients selected for processing
2) the mixture after 5 minutes cooking
3) the final product, duly jarred.
