The CookingBites recipe challenge: pickle

Here's my second entry: Christmas Pickle/Chutney
First of all - no pictures (yet) because I haven't made this in over 10 years.
Secondly - it occurred to me that members might have some leftover dates, pears, green apples, etc. from Xmas. Now that might just be a throwback to my childhood. The only time I ever had dates as a kid was at Xmas.
This pickle/chutney is fruity and very mildly spiced; perfect for cold chicken, pork, ham and, obviously, cheese.
Add bourbon...

Vera Cruz-Style Fish
I'm always looking for recipes that incorporates as much vegetables as I can get away with.
My DH loves fish, not so much the veg, but he loves this dish!
I've only made it with White Fish, so I'm not sure how it would play out with other fish.

My first one:

Wine-Pickled Garlic Relish

This is actually two recipes; first, you get to make some pickled garlic, then you get to use that in the finished relish.

Just a few simple ingredients, but oh so good! The main thing that came through for me was the brightness from the pickling juice. The garlic mellowed quite a lot during the process…they’re easily munchable on their own.

All in all, an excellent additional to anyone’s condiment arsenal.
