That's what I was thinking too. Mind you, the Scottish one would be lovely.
Well I suppose it is a version of 'Eton Mess' (just in case other members are wondering what we are talking about!). But whether its deconstructed or constructed is up to you to decide. I will post a photo soon!
I still haven't decided what to call this. And I'm still writing up the recipe. But here it is:
