The CookingBites recipe challenge: tinned/canned tomatoes

Catfish Gumbo - I didn't do this recently, but looking at it now makes me want to create it sometime soon. Actually, can I use this if it was posted but not used in a recipe challenge? And, I just realized that I can't add the Recipe Challenge tag..I can't even edit the post. It must have been archived after nearly 4 years. I wanted to change the fresh tomato to an optional (and much easier) canned variety.

the recipe has already been written up on CB so that doesn't qualify for the challenge. You would need to re-write it making it sufficiently different from before to qualify as a new recipe.
 
We’ve not reached double digits for recipes yet…c’mon, let’s get some cans opened on this thing!

Hungarian stuffed cabbage rolls
When I saw the challenge title, I immediately thought "Italian". However, even though tomatoes were originally from Latin America, they were suspiciously received by their European counterparts . In the 1600s, Richard Surflet said of the tomato, “This plant is more pleasant to the sight than either to the taste or smell, because the fruit being eaten provoketh loathing and vomiting.” Silly old twit!! the late 1880s.
Anyway - there are many variations of stuffed cabbage in Europe - in Poland, Hungary, Slovakia, Croatia, the Czech republic and Hungary. This caught my attention because of the addition of paprika, caraway seeds and sauerkraut.
The recipe is "mine" because I synthesised 10 Hungarian recipes and chose which most common ingredients I would add.
I'd say mine were slightly overcooked, because when the oven timer sang, a friend arrived. I turned off the oven, cracked a couple of beers and left the dish there.

I've been working 7 days a week, doing my taxes Monday, then back to work for the rest of the week...and then I have to go to my great niece's birthday party next Saturday the 19th. I plan on taking a few days off after that. Any chance of a further extension?
