I have scars on my hand from my first attempt at blackening Mahi Mahi earlier this year. I neglected to lay the fish in the smoking butter away from me. Screaming hot butter is painful.
Did it also get lost in the smoke for a few seconds?
No. I do this outside on the side burner of the grill, so the smoke was wafting sideways in a breeze. But yeah, that hot.
That reminds me, If anyone attempts blackening, it must be done outside, unless you have the ventilation system from hell!
