What did you cook/eat today (December 2017)?

,Honey finally finished cleaning his fish. He had a nice batch of Red Fish - common in the marshes and coastal waters.

The skin does have a reddish color. They will always have at least one spot. Some have more. They can get large - 30+ lbs. The big guys - Bull Reds are fun to catch but not the best eating. The smaller reds are called Rat Reds and are much better on the plate.

After cleaning his fish G decided to make Red Fish Sauce Picante. This is one dish that I always leave to him. It was wonderful. Just enough spice in the sauce and the fish added at the very last minute.

I had a nice slice of herbed garlic bread from an artisan shop. Wonderful to mop up the sauce.

Thanks to my Honey for a very good dinner.

@ElizabethB this dish looks very scrumptious! And to mop up the sauce is a must...I do "scarpetta" with bread too...:)

Almost worth flying across the Atlantic for this fish & the garlic bread to mop up the salsa ! Absolutely looks marvelous ..

The limit for Rat Reds (under 27") is 5 per man. Each man is also allowed 1 Bull Red - over 27" So three guys - fished 2 days and limited out both days. They each had 10 fish. They did not keep any Bull Reds and actually culled the Rat Reds to keep them in the 18" - 24" range. It is a firm textured fish - not flaky like flounder or sea trout. Perfect for cooking in a tomato sauce or for grilling.

It is a warm water fish - usually found in the marshes and coastal waters of the Gulf of Mexico. Baby Brother is an advocate of fly fishing He fishes the marshes south of Lake Charles, LA. He likes to sight fish - shallow water where he can see the fish.

My personal favorites for Louisiana salt water fish are flounder and sea trout. Both are very delicate. They were not running this week.

The guys limited out early and decided to try crabbing. They bought chicken necks from the bait shop and had a blast catching Louisiana Blue Point Crabs.

@morning glory - I have told him about the positive response to his dish. He is so proud. He has NEVER agreed to share his recipe with me Guess what he is doing - typing up his recipe for me to share with you! He is puffed up and beside himself with pride. All of a sudden his "secret" recipe is one he wants to share. He wanted to know if it was being entered in a competition. :laugh::laugh:

Good thing I love that man.

Wow .. Rat Reds are quite large too .. Yes, I can see the texture reminds me of cod fish, or rape = monkfish, very firm and snow white. And yes, good with sauces especially tomato based ..

Normally, from what I know about flounder ( thought it is often an Atlantic species ) prefer colder waters, so perhaps they have migrated north .. Fish are not stationary ..

Wow, blue point crabs too .. Well, sounds like a shellfish & fish fiesta ( celebration ) .. Enjoy ..
