Tonight's dinner was chicken curry with steamed rice

Recipe here https://www.cookingbites.com/threads/chicken-and-cauliflower-curry.9312/, but I omitted the cauliflower and used dried coriander added with the yoghurt. I garnished it with finely chopped root ginger. Afters was a big handful of fresh grapes.
 
Looks very good. Do you mean ground coriander seeds or dried leaves. I find dried leaves taste of not much.
Leaves - I find you have to put a fair amount in, a bit like with dried parsley. Tesco's living coriander looked a bit sorry for itself, presumably because of the very cold weather a couple of days ago, and I have trouble keeping herbs alive in my kitchen when it is cold so I tend not to buy it in winter.

Almond Cardamom Crescent Cookies. The cardamom is subtle, but it pairs nicely with the almond. Now that I look at the picture, the confectioner's sugar didn't stick quite how I intended. Maybe it's because I decided to leave the almond bits relative large. Here's what some of them looked like post-bake, but pre-dusting.

I had oatmeal twice today. Boring, but filling. Especially for a Weight Watcher who plans to go crazy overboard on Christmas Day at my parents. I’m bringing a lasagna pan filled with my to-die-for stuffed shells and my mother is making meatballs and braciole. I’ve been dreaming about it for a week now.

Some lovely meals and baking happening. ‘Tis the season.

I’ve been baking & making all day.

Mint ice cream with crushed candy canes stirred through.
Cinnamon sugar cookies
Shortbread
Melting moments
Orange & polenta biscuits
Sesame lavosh

I’m going to sandwich the melting moments with chocolate icing and roll them in crushed candy canes.


My kids asked me to make particular shapes to decorate for their cousins. We are hosting Xmas lunch.

Fabulous gingerbread cookies .. Truly lovely ..

Using up some of the smoked turkey and homemade andouille sausage, I made gumbo. I used Paul Prudhomme's (RIP) quick roux method to make a dark red-brown roux to start. Had all the mise en place and stock (chicken) ready to go.

Another new one to me!

Cotechino it's a sort of big salame made with pork, pork rind and its fat, spices and aromatic herbs..it's very soft when you cut it and trust me...very good and tasty. Usually is served with lentils, mostly on New Year's Eve in Italy (according to the ancient tradition, eat lentils on NY'E bring luck and money) or also with mashed potatoes or vegetables such as peas or spinach. Preparation of cotechino (name derives from cotica - rind) it's quite long but nowadays you can find it precooked..15 mins in the pot and then ready.
Emilia Romagna is the most famous region producer of cotechino..they also call it Zampone (derives from zampa - pork paw)

Braciole...interesting. Do you mean meat rolls (involtini) or
fried/sauteed meat ?
