What did you cook/eat today (December 2017)?

I had oatmeal twice today. Boring, but filling. Especially for a Weight Watcher who plans to go crazy overboard on Christmas Day at my parents. I’m bringing a lasagna pan filled with my to-die-for stuffed shells and my mother is making meatballs and braciole. I’ve been dreaming about it for a week now.

Porridge can be delicious, but twice a day I'm not sure I could do! You Xmas meal sounds rather Italian...:hungry:
 
Leaves - I find you have to put a fair amount in, a bit like with dried parsley. Tesco's living coriander looked a bit sorry for itself, presumably because of the very cold weather a couple of days ago, and I have trouble keeping herbs alive in my kitchen when it is cold so I tend not to buy it in winter.
Try freezing fresh coriander - it works a treat.
 
Evening!

Some lovely meals and baking happening. ‘Tis the season.

I’ve been baking & making all day.

Mint ice cream with crushed candy canes stirred through.
Cinnamon sugar cookies
Shortbread
Melting moments
Orange & polenta biscuits
Sesame lavosh

I’m going to sandwich the melting moments with chocolate icing and roll them in crushed candy canes.

Wonderful! What a lovely list of goodies. What are melting moments?

Almond Cardamom Crescent Cookies. The cardamom is subtle, but it pairs nicely with the almond. Now that I look at the picture, the confectioner's sugar didn't stick quite how I intended. Maybe it's because I decided to leave the almond bits relative large. Here's what some of them looked like post-bake, but pre-dusting.

They look better in the before photo... I like the idea of crescent shapes and chunky almonds. But you say 'dusting'? Looks more like a heavy snowfall! :happy: I'm not sure how they are supposed to look though.

12 raisins both in Spain and Portugal? Nice, didn't know this..yes on 31th at midnight lot of plates with lentils with cotechino and spumante or prosecco. Perfect combo.

Yes, lentils are very common in Italy on the 31st ..

Persimmon Rum Gelato.

It looks like pumpkin and, if you've had persimmons, you already know that it tastes like pumpkin. I decided to avoid the usual pumpkin pairings, though cinnamon is always going to work. Instead, I used a tablespoon of really good rum (Pilar) and brown sugar instead of the usual white, since this rum has a distinct brown sugar flavor. I used Hachiya persimmons, which need to be so soft that they seem like they're rotting (otherwise, they have a bitter flavor). I added 1/4 teaspoon of Allspice to round out the flavor: it's like Christmas in a cup!
