What did you cook/eat today (June 2017)

It was another night of not enough sleep, then I wore myself ragged with errands today. Came home, looked into the fridge and thought "take out?" Being an extremely cheap frugal person, I searched through the fridge and came up with bacon, hot dogs, dill pickles, condiments, and cheese. A peek into the freezer resulted in brioche rolls. A trip to the basement netted a can of baked beans and a bag of corn chips. None of it has a bit of redeeming quality about it when it comes to a sensible meal, but we don't do this that often. I'll clean out the salt with a dish of fresh fruits and a bi of vanilla ice cream in a little while. Meanwhile, this was supper:

Too busy at work. I had a piece of cheese 12 hours ago.

Dinner is going to be machi pachi tonight; whatever hits my desk. ASAP.

Anyway, yeah, some Grandma Pies are thick. I guess it depends on the granny.
 
Our evening meal... it will be served over homemade tagliatelle (or fettuccine I'm still working out the difference and what I have made)...
It's roughly my 'Indian' only 2 onions, 2 courgettes and 4 tomatoes. then the spices mix... asafoetida, cumin seeds, yellow mustard seeds, black mustard seeds, hot red dried chillies, black cardamon pods, ground black cardamon (needed to be used so less whole pods were added and this used up), sweet red paprika, turmeric, ground cumin, ground coriander, hot madras powder (for a change), homemade garam masala, curry leaves (added after the photo), and tamarind. I think that is all of them :whistling:

Given it is lacking protein, I will probably threw in either some red lentils or chickpeas and serve it with a helping of edamame beans.

That looks good.
 
We tried some samples that a food representative offered us. Rectangular flat breads. They come in frozen and you simply dress them and pop in the oven. Very trendy in the restaurant scene at this time. I made up a few. They cooked up nicely, and were very convenient. But, they just weren't good. They had a Bisquick texture.

That looks good, Rocklobster. I could cut one of those in half, fix a big salad, and have a meal for now and a meal for later.
 
That's tough for you. I'm lucky not to have that. My carb need isn't a sweet craving at all. I crave potatoes, bread, rice. I don't know how those things fit into a diabetic diet...

I have found that red potatoes with the peel, roasted in the oven, don't raise me too much. I slice them and use them with breakfast a lot (1/2 cup which is about 20 carbs). I very rarely eat rice, unless it is with Chinese food (about 1x every 2 or 3 months). I don't eat "white" bread much at all (1x a week when I fix homemade french toast). We have wheat bread in the house as a staple now. I may have a biscuit or a hamburger bun about 1x a week when we are out doing the shopping.
