Looks good. What is it?
It is a pasta dish made with leftover beef, onions, garlic, spices, fried then simmered in a beef broth. Reduce it down, then throw in your al dente pasta to finish cooking. Add parsley and loads of fresh ground black pepper....I had chopped, marinated vegetables with it last night..

We are having creole pork chops, rice, fried okra and Brussels Sprouts.

My wife made an eye round roast beast, nuked spuds, and garlic and evoo sauteed spinach and onions.

I think I'll keep her a little longer.

How did she cook the roast?

Salted and peppered, seared on all sides in grapeseed oil, then in a 300 degree overn for an hour.

Came out perfectly medium rare.

Then why did she nuke the potatoes? I would have baked them.
I may borrow her recipe since I have an eye of round roast.

I guess we're just used using the microwave for the convenience, and the results are about the same.

Be sure to use a meat thermometer. It went from 120 to 130 in no time.

I did learn do not make a prime rib in the winter. It dropped in temperature instead of rising.

Did you cook it outdoors, Cin?

We had corned beef, cabbage, and redskin potatoes today. And soda bread.

I hope I see good sales on corned beefs this weekend. I want to make a pastrami in the smoker when the weather warms up.
