What did you cook or eat today (April 2020)?

Almonds work fine in a pesto. I'd imagine cashews and pecans would as well, besides the other nuts listed. I'm not big on walnuts either, but don't mind them in pesto and romesco.
I use almonds because the batches I make are so big the cost of pine nuts makes it prohibitive. I like to roast them well before adding them as I love the toasty note.

I have pesto in fridge I made, pan fried pine nuts. I have walnuts but wife doesn't like them.
