What did you cook or eat today (April 2025)?

I've just planted a couple of sweet potatoes in the garden. Once they start reproducing, I should have enough for a month! I like sweet potatoes,(except for those ghastly things with marshmallows) although I don't cook them that often. I think you do have to be careful not to overcook them, though; they take less time than a "normal" potato.
Well, that must depend on the variety because all the sweet potatoes I've encountered take longer, particularly when baked.

The mashed sweet potatoes I made last night were some of the best we've had because they were cooked covered with a small amount of chicken stock, butter, and S&P, and then mashed. No need to drain. Of course, that means you have to follow the recipe for proper proportions.

Decided make do with what I had here and according to my Spanish food folder I made medtran49's hot n sour soup first here.
It's a version of it cos I had to sub some ingredients but it worked very well.
Chicken and Mushroom Hot n Sour Soup with a side of Black Sesame Chicken.

Sweet potatoes are imo tricky devils.
They can very easily be wet and watery flavoured and in those cases I'm not a fan either.
But I've tried most of the offerings in the UK and while the majority miss the mark completely a couple of the chips (fries) options aren't bad.
Still not good enough that I buy them though 😂
Sweet taters here are 3 colurscthat I know. Orange I use in my curry puffs. Red I roast . I only use 2.
