Well, that must depend on the variety because all the sweet potatoes I've encountered take longer, particularly when baked.I've just planted a couple of sweet potatoes in the garden. Once they start reproducing, I should have enough for a month! I like sweet potatoes,(except for those ghastly things with marshmallows) although I don't cook them that often. I think you do have to be careful not to overcook them, though; they take less time than a "normal" potato.
The mashed sweet potatoes I made last night were some of the best we've had because they were cooked covered with a small amount of chicken stock, butter, and S&P, and then mashed. No need to drain. Of course, that means you have to follow the recipe for proper proportions.
