Hi JasWe are doing Tex-Mex tonight with leftover chicken from last night. I am going to sauté some red bell peppers, jalapeños, and onions and add some Adobo seasoning. I have some refried beans, cheese, and sour cream...making fajitas. I also have a pound of good chorizo (Mexican style) that I think I might make some queso fundido with for chips. I wish I had thought to get avocados. The ones in your pic look perfect!
Thanks for the heads up mate.Today's left overs.....
Stir fried pork with honey and capsicums accompanied by stir fried cauliflower and fennel. Not a combination that I've tried before; nor am I likely to try it again.

Do you mean fennel seeds?
Why´s that? Do you wear a pork pie hat?We have one halal butcher shop near me. When I walk in, they ignore me.
Hey, I ended up not making the queso, but probably multiple ways to do it. I don't like flour roux, I prefer melting cheese in heavy cream and thinning it out with milk or half n half whenever I make any kind of cheese sauce. I'll fry up the chorizo and drain it, then stir it into the cheese sauce. Serve with warn corn tortilla chips. At the restaurants they sometimes serve with actual corn tortillas and chips. I like a little salsa on the side too. And of course margaritas!Hi Jas
We’ve had a pretty good avo season this year here. We eat a lot of them, all year round but I love when they are perfect AND cheap
This “queso fundido” is a new one on me. I had to look it up. Looks amazing.
How do you make your?
This is ochazuke, my one true (lunch) love.
