Yeah, you probably already know I am making them exactly how I want them and not going "traditional" with it. Much like everything else I cook. IDGARA if it's not traditional, LOL. I cook to suit our tastes.

In the 10 times I have been to Mexico, I never found any cheese served with fajitas. Not even crumbly Mexican cheese. I am going to use Monterey Jack because that's what hubby likes.

BTW, that wasn't a criticism of your fajitas. It was more of a history lesson kind of thing. You would be hard pressed to find any TexMex restaurant in Texas that doesn't serve fajitas with all those toppings, and maybe more.

Yeab, I know nothing about Texas. How could I possibly since my parents were both from there and my cousins, aunts, uncles, and grandparents were too (cousins still live there)...and of course my sister and a brother both live there. And one of my stepdaughters. But you already knew that since we've discussed how my parents, cousins, and grandparents all lived in the same town you went to high school in and one of my cousins knows your sister.

I've probably only been to Texas 100 times. So yeah, I know nothing, thanks for the history lesson!

Just wanted to make sure you knew I found it condescending and patronizing, even though I don't think you meant to be. And your post about it was directed at me, you specifically quoted my post.
 
Ok gotcha. I think they are cheap as chips anyway so not worth making???

I've got some recipes posted here for making them. It's easier with a tortilla press, which i don't have. And yes they are cheap to buy.

Recipe - Mitad y Mitad (Half Corn Flour, Half Wheat Flour) Tortillas

The recipe above is for half wheat flour half corn tortillas. I've also made straight corn tortillas. I have never made flour tortillas but I imagine it's probably easier. I might have to give it a try sometime, and if I do, I will let you know how it works out.

Okay, food is ready, just trying to find my appetite. I seem to have lost it somewhere, LOL. Actually I am still struggling with lack of smell and taste (which obviously affects my appetite) from having covid, though it's slowly getting better.
