Palestinian upside down rice... hubby had the colourful plate with the yellow peppers. It's a rice dish, cruise with ratatouille and lined with potatoes. Delicious. We've another double serving of it in the bottom of the freezer yet.
We may reach the bottom of freezer meals rather than content such as apricots, plums, pear chutney, pastry and such by the end of next week/ next weekend, maybe... and I might just feel well enough by then to consider cooking again. I've a hankering for an Iranian dish that's rice, lentils and herbs if I recall correctly. But I also fancy a spaghetti tahdig as well.
I thinned the sauce a little after this photo. Hubby 'forgets' especially with reheated, previously frozen sauces. This was the no butter, no chicken (masala) sauce with tofu, brown basmati rice and some broad beans.
Strictly speaking, this was not eaten "today", but last week. I just forgot to post it.
Initially I'd bought some lovely big tomatoes to stuff, and I wanted to do something vaguely Lebanese. Fried the meat with a bit of onion, garlic and 7 spices , then added about a cupful of cracked wheat. Made a tomato sauce with passata, a bit of hot pepper and lime juice.
There was plenty of meat left over, so I borrowed an idea from a Lebanese friend and used it to stuff some courgettes/zucchini. Made the tomato sauce with onion, tomato paste, celery, lemon and a hot pepper. Really tasty with some homemade pita bread and potatoes.
