What did you cook or eat today (January 2023)?

For the first time in probably 20 years I've not cooked my husband steak, egg, chips, mushrooms and peas for new year. I've been adding drawers to kitchen cupboards so the kitchen is upside down. We did have some Portuguese Squid Stew from the freezer though. 😋
But you and your husband were together, that is what is more important than the actual meal! I hope you like your new kitchen updo!
I have been rearranging my utensils within the existing kitchen drawers just today, it went fine, had to place some stuff in the other cupboard...
 
How yummy. What is the gain in twice frying? never did that,so that is why...are they crunchier? Do you fry them a second time right away after the first time?
Fry first time @ 300 for about 3 minutes then take out and drain well. Let sit, then turn up the heat to 375 (about 10-15 minutes later)and fry for about 1-2 minutes. The first fry at a low temp cooks the inside, then the second fry heat the insides back up and then crisps the outside. Crispy outsides and pillowy insides.
 
A lovely lunch at a local mall, chicken roll with spinach and cheese, rice on the side, lettuce, and a lemonade, which was not. I feel like some other ingredient had been added to the lemon and water. I hope for jsut a plain lemon and water... but it was ok, we survived. Daughter had a Schnitzel with mashed potatoes, and a cabbage salad. She was happy with the food too. Not with her orange juice though, which also had some other than just squeezed orange in. Anyways, we have forgiven them...:happy:

Twice frying potatoes makes them fluffy inside, and very crisp outside. You do the first fry at a lower temperature (300F) to par cook them. That cooks the inside of the fries. You let them cool while you raise the frying oil temperature (375F). The second fry puts that crispy shell on the fries.

Sounds magical, I just took notes of those instructions. My daughter is a huge french fries fan, so this will probably be heaven for her. The usual method is only halfway there for her... Thank you!
Oh, yes, she recently did sweet potato fries, which she liekd a lot, we may try both potato sorts and double fry them...is that correct?
 
These almonds were just roasted, I hear them crack while cooling. The muffins (gluten free, from a box mixture) are cooling as well, can hardly wait to try them. I used 120 g of chopped dates plus 20 g of vanilly flavoured sugar, instead of the whole sugar quantity recommended.
