I also saw one where they added a dill pickle in the middle that worked surprisingly well in the overall flavor profile.
Yes. German Rouladen has a gerkin in the middle. I’ve done that a few times. The long cook really mellows out the pickle.

Bone in pork shoulder was on sale for $0.99 a pound a few weeks ago. I broke it down and got a couple of big pieces, plus a couple of quart bags of chunks.

I thawed 1 of the whole pieces, put an Asian cure on it, with a few drops of liquid smoke added, wrapped it in a banana leaf, then foil, then roasted until it hit 210 F. Shredded it, pickled some cucumbers and red onion, made bao for sandwiches with some hoisin and sriracha.

We were out running errands today, so stopped in at a pub for lunch.

I had vegan fish tacos. They were delicious, although the vegan “fish” tasted more like chicken.

We were late eating and it was a big meal, so we’ll probably have soup for dinner, if anything.

Why the vegan fish? Fish is good for you... did they offer a grilled fish option? Fish is a low-fat high quality protein. It is good for your heart health.

I just can't wrap my head around the concept of "vegan meat." I make portobello mushroom tacos that are vegetarian but could be vegan if you ditch the crema, which is not a big loss. Mushrooms make good meat alternatives, without pretending to be something they are not.

I just like trying different vegan versions of different dishes is all. It’s fun to try pulled jackfruit, celery root shawarma, scrambled tofu, etc.

I like meat, and I eat meat. I agree with you that fish is healthy (and I eat it quite frequently). But it’s also nice to try different things, and sometimes I discover something that I haven’t tried before that I really like. It is partly influenced by wanting to eat foods that have a lower environmental impact (which plant-based foods generally do, vs. animal-based food).

Unfortunately won’t be trying the portabello fajitas, but that’s just because I don’t like mushrooms!

It's fortunate that I happen to love shrooms.

I focus my environmental impact efforts on things like driving a ULEV vehicle, consolidating trips to drive fewer miles, and managing my heating and AC thermostats for efficiency. I have a fire in the fireplace right now, which is rare for me, but it is gas fired with high-ceramic content gas logs. It is going to be expensive, but it is lot cleaner than burning wood.

As for food, I buy as close to local as I can. I don't buy beef from Australia, or seafood from Asia, and certainly not butter from Ireland. I even buy California EVOO. Beef from Australia and seafood from Asia is cheaper (makes no sense to me), but I'll pay more for Texas beef, because it is good beef, and it only travels a couple-hundred miles, and buy wild caught US seafood, preferably from the Gulf.

I also avoid buying plastic wrapped produce, and the back of my car is full of reusable shopping bags.

I believe that if everyone just goes after the "low hanging fruit" of having a smaller carbon footprint, the combined efforts of billions of people would be amazing.

That’s awesome!

I agree we should all be doing all we can to lower our carbon footprints; I’m right with you on a lot of these items. I commuted by bike exclusively for years, and by public transit now. I drive a hybrid when I do need to drive. I eat local as much as I can, and grow a bit of my own food. I put geothermal heating/cooling in my house, and solar panels on the roof (in addition to the smaller upgrades like a programmable thermostat, low-flow showerhead, dual-flush toilet with bidet attachment, etc).

But I always do have this weird feeling that I should be doing more. I still need to switch out my water heater for an on-demand tankless one. I eat meat, dairy, and eggs (although in limited quantities). I love a good hot shower.

There’s a balance you need to strike, I feel, between doing what you can, and giving yourself a bit of grace for not being perfect, while still realizing and working towards getting better.

My career is sustainability, so I also put in work to improve the situation daily at work. That helps, I think.

Evening meal

I precooked the mushrooms & onions, then effectively added everything to the 2 Turkish bread rolls that are under there, treating it as a tear and share idea...
