Mr SSOAP loves a good scotch egg (his mum makes really good ones) so I thought for his munch pail I’d do some mini ones.

I know hard cooked isn’t everyone’s preference for a scotch egg but that’s the way I like them, that and you can buy them pre-cooked hard boiled
Only problem is I thought one little packet (12 eggs) wouldn’t be enough so ordered two
Now I’m looking at them in their jackets I think 24 is rather a lot and I’m only halfway through cooking them… eyes.. bigger.. than.. belly

I immediately thought back to other articles I’d read on the murky history of the thing, and recalled that the original Scotch eggs were supposedly quails’ eggs, and therefore meant to be poppable whole, right into yourcakeegg hole, which means a runny yolk would be most welcome, I think.

Looks incredibly good ! I'd lean towards Thai because of the curry paste, yellow curry powder, lemongrass and coconut milk; but it matters not a jot. As long as it tastes good, that's all that matters.It doesn’t know if it’s Mexican or Thai or Indian and is that peanut butter taking it in an African stew direction?
