Very Thai, except for the beans
Where are your vacuum eaters aka your boys?Woke up early and decided to get on with making Scotch Quails Eggs ready for hospital picnic tomorrow.
Mr SSOAP loves a good scotch egg (his mum makes really good ones) so I thought for his munch pail I’d do some mini ones.

I know hard cooked isn’t everyone’s preference for a scotch egg but that’s the way I like them, that and you can buy them pre-cooked hard boiled
Only problem is I thought one little packet (12 eggs) wouldn’t be enough so ordered two
Now I’m looking at them in their jackets I think 24 is rather a lot and I’m only halfway through cooking them… eyes.. bigger.. than.. belly

Latkes! Another potato recipe I should prepare. I haven't had those in a minute so a change up from mashed! We had latkes, because they’re delicious. I like to divide the potatoes into 3 bowls and add grated rutabaga to one, grated beets to one, and grated zucchini to the last one. You get really pretty red, green, and gold latkes this way. No photos, we ate them too quickly.
Husband is out for his walk now, when he gets back we’re going to have some veggie samosas (just the frozen ones from the supermarket) and leftover champagne.
They look green. Are they candy coated pecans or something like that?At the hospital waiting for Mr SSOAP to return from theatre. Fingers crossed it’s all straight forward in the mean time I have to sing the high praises of Marks and Spencer (and Waitrose) that are slowly replacing the terrible concessions available at motorway service stations and hospitals. Lovely to actually be able to buy a sandwich (wrap)!
Had to have the tomatoes cos I could smell them through their carton!
Which meant I had to buy salt
