What did you cook or eat today (January 2025)

Recipe, pleeeeeezzz!!
My son (who has cerebral palsy but the eating habits of Godzilla) absolutely loves brownies. And brownies are reasonably simple, so I ( not a baker) will have a lesser chance of screwing them up! :laugh:
A bit expensive to make, but OMG, the absolute best brownie ever for adult tastes.

Recipe - Mascarpone brownies

Went out for dinner. Had a $100 gift card from a mystery shop job, so dinner cost $26 and change, all of which short of $2 and change was tip. Two 15 oz prime ribs, 2 glasses of wine, 1 coke, 2 sides, 2 clam chowders we got to go and 2 fudge brownies, hot fudge, ice cream also to go.

Pugs got a few pieces of prime rib.

Maybe - but here in Venezuela, we've got extremely good cacao/chocolate, at very reasonable prices, and a huge Italian population - so mascarpone is easily available.

Yesterday evening, my wife said:
"My sister is coming over tomorrow, because it's her grandaughter's 13 birthday, at my house, and the (new) teen said she didn't want ANY adults there.Prohibited! "
We were just going to have a few drinks and snacks, but then I woke up in full Curry Mode - so I made pullao rice, mattar paneer, Hyderabadi aubergines/eggplant (wife adores them), Indian chicken kebabs, raita,and lentils (toovar dal) with cabbage. papadums to start, along with some Bombay mix I'd got hanging around in the kitchen. (Lousy) pictures to follow...

I bought the pineapples at the traffic lights :)
They are in season and they were 20 kwacha each (U$ 0.73).
I bought 3.
Gave 1 away, almost finished the other.
Number 3 is for tomorrow or maybe for juicing
Pineapple pancakes are delicious btw. Puree pineapple and add it to the batter.
 
Fresh is the way too go for me....
Yes, I was talking about using fresh pineapples in my food processor and making puree for the pancakes, which I then top with fresh pineapple chunks and sometimes toasted crushed pistachios. Sometimes 1 pineapple is just too much all at once for just the two of us and it only keeps for so long, so I try to figure out multiple ways to use it and then freeze what's left before it goes bad. Often we get mutant pineapples, they are so huge!

Here we go then. I served up pappadums, with a yoghurt and mint chutney, and some Jaffna Mix ( a combination of peanuts, fried chickpeas, nuts, fried besan flour crisps) for starters, while we loosened up with some prosecco and Rioja. Then came the mains. wife had taken some chicken out of the freezer and said:
" I'm going to do something with that".
She didn't, and they were chicken tenders. I blitzed them in the food processor, add onion and ginger, a tsp of chile powder and garam masala and made them into kebabs. Used some toovar(arhad) dal , sometimes called split pigeon peas, and added cabbage, onions, tomatoes and sambhar masala - a really spicy mixture from South India. Mattar paneer ( Indian cheese with peas) and absolutely my favourite aubergine recipe, baingan ka salaan: aubergine slices with peanuts, coconut, sesame paste, tamarind, palm sugar, lots of fresh chiles and a pile of spices. Accompanied with Pullao rice, raita, mango chutney, fruit chutney and Chettinad garlic pickle.
The picture of the rice is an old one because they were all hungry yesterday and I didn't get a chance to snap it!
