For breakfast we had homemade blackberry granola. We snacked on homemade brownies and bananas for lunch. Dinner: mashed sweet potatoes with sunflower microgreens and roasted corn (air fried) A little avocado oil, salt and pepper to season it all.
Looks delicious, I love those spaghetti with simple tomato sauce. I guess that 'eggplant parm' is 'Parmigiana di melanzane'.. One of my fave dishes and it's such a long time I don't make it.

It's hard to see with a straight-down snap like this, but that's a piece of grilled bread (homemade), with a hole cut out and an egg fried in it, then some cheese on top, then another bread-and-egg, like a sandwich.
A chunk of lamb rubbed with a paste of garlic, rosemary, salt and pepper roasted over a bed of potatoes and carrots, with a side of zucchini, yellow squash, butter and Ritz cracker crumbs casserole
Ok, tummy rumbling, I gave in, havnt been to local deli for sauerkraut, was looking for s Reuben but settled for corned beef and chow chow. That's a pickled cauli gerkin type relish. I love it. No white bread so I settled on wife's birdseed bread. It was still 10/10.
Home-made pizza with a vegan (and gluten free, though we don't need that) cauliflower pizza crust (different to the last one), tomato paste, garlic mushrooms, balsamic roasted shallots and home-made vegan mozzarella. Drizzled with truffle oil and a thick 'sticky balsamic vinegar'.
I'll write up the recipe tomorrow!
I also ended up with 2L of home-made cashew nut milk. We'll use it to make porridge over the next few days.
