I've only made this dish once before and can't remember what we thought of it, went it can't have been too bad because the recipe wasn't marked up as avoid...
This time around, I made it with the extras that are suggested, so there is spinach and walnuts in the body of the soup, and the garnish of more onions & mint was also made, plus I did the eggy bread with sourdough. It seemed like the perfect match having large holes to hold the beaten egg in, but still absorbent enough to completely soak the bread without it falling apart. It worked perfectly and wow, it is so very nice. There were 2 eggs each, 1 in the dish and one in the eggy bread/toast.
It's a Persian peasant dish, though as the recipe says it is fit for a king. Hubby wants it on the recipes we like list. It's actually pretty easy to make once you've worked out how to caramelise so many onions. 6 largish onions is roughly 2kg, but only 5 or 6 tbsp of oil total. I ended up cooking it on 2 batches, transferring to a larger pan as I had cooked each batch. So that added maybe 10 minutes to the cooking time. A surprisingly simple soup, but very tasty, Eshkaneh or simply Persian Egg & Onion soup
