New Zealand beef fillet with air fried chips and green peppercorn sauce.....





Note for Morning Glory: the air fried chips are getting better. They were par boiled for 3 minutes then drained and left to cool. When cool they were placed in a bag with a little sunflower oil and shaken around a few times when I remembered. Cooked in the air fryer for 20 minutes shaking every 5 minutes.

After staying in all day because we were feeling rough after the Covid jab. I played up the symptoms like a true man. Mrs B made me coddled eggs on toast for dinner. I did not take any pics as I thought she would suss my scam.
Got to play the "man" card every now and then... although my wife has me pretty sussed now and doesn't fall for it very often. She's very adept at playing the "Girlie" card though.
 
Later today, I will make a meal of the last thing in my refrigerator before I defrost it, clean it and get it ready to move to the new apartment.

That last meal at the old address will be a Stefano's pepperoni calzone.

“Arraganate” potatoes. Baked potato slices with onion and tomatoes, seasoned with dried oregano, grated Pecorino and breadcrumbs

The above image reminded me of a potato dish which I haven't cooked for a long time (and that will be rectified).

I cannot remember where the recipe came from but it could be Indian immigrants to South Africa.

How do you prepare the smothered chicken? Looking at this, pretty sure kid would love it...Is your dish similar to this one? Looks amazing!

It's kind of similar. I'll try and write up a recipe later today. It's a dish I just make, have never had a recipe. I'll make it again soon. It's 1 of Craig's favorite meals so he certainly won't mind.

Interesting. I've taken a look at your recipe and I like the use of chickpea flour.
Who knows, maybe something from Indian immigrants to South Africa then reached out South of Italy too. I wouldn't be surprised, and I find it fascinating.
