What did you cook or eat today (March 2023)?

Took the leftover ciabatta and made sandwiches with them. Griddled ciabatta with turkey, provolone, tomatoes, living lettuce bacon and some red onions I marinated in red wine and some seasoning. They were incredible.

Busy day, yet again, so I went to my deep freezer diving and came up this with this ready-made frozen meal.
That was a good sized portion with seven shrimp.
Not bad, but I can't say that I've ever had any sort of Scampi style dish with Tomatoes before ... I picked them out

Knowing how much you dislike tomatoes I'm surprised you bought it!

Puggles and JAS_OH1 I buy these when they have them 1/2 off for my Mother and well, sometimes I need something easy.
She really liked their Eggplant Parm as well.
Mom does "shop" (I do online orders for curbside pickup for Mom with her credit card) at the markets that I like to go "pokin' around in".
Then I just hold frozen meal for her in one of my three freezers and can easily pull supplies out to take over to her.
Mom is finally listening to me and writing down what meals she likes and wants again, she's even watching the TV commercials and write those down that she wants to try. She has two new-to-me-never-heard-of, had-to-look-them-up

Yes, I've no problem with easy frozen meals. I like Stouffer's lasagne and Marie Callender pot pies occasionally. It was the tomato thing that had me scratching my head since I know you don't like them!

Right!
This is one of Mom's faves, but I can over look a bit of it just for the Shrimp

Boston Market pot pies are surprisingly good, when you make them the long way (oven).
