What did you cook or eat today (March 2025)

Baked pasta with leftover meatballs and Italian sausage from the freezer, homemade marinara, ricotta, some leftover Italian mix grated cheese, with fresh mozzarella on top.

Every time we order from/dine-in at our favorite Asian restaurant, I get the Mixed Vegetables with Beef, Chicken or Shrimp and upsell to Lo Mein... thought I'd make my own since I had everything on hand and really haven't been cooking much as of late.
DH was very happy.
I started out with the idea of Chicken & Asparagus stir fry, but I didn't like the blah colors, not to mention those two meager b?s chicken thighs sliced up to look like alot more than I bargained for.
I wound up getting FOUR servings, when I started out to make only 2 ... isn't funny how a stir fry grows? :happy:
So, I packaged up a take-away for Mom and then we have 2 more that I may or may not take next door.
 
this is old recipe, on browned up paper . . . Country Captain's Chicken...
dredge & brown the chicken, reserve (in the pot: 2x thighs + 1x breast)
sweat down onion & green pepper, add garlic when done
add: tomato (I use stewed, recipe says "whole")
plus parsley, curry, salt, pepper
add chicken back to pot; simmer ~50-60 minutes til chicken tender
top with toasted almond slivers on service (over rice)

This company Wild Fork has both grass fed and grain fed Australian lamb, just like in the USA you can find both grain fed and grass fed beef (along with grass fed grain finished).

Went to the bar on the lake for an early dinner. I had a fish sandwich and DH has a bacon cheeseburger.

We are going to the beach later today instead of family dinner here . Fish n chips out.
