What did you cook or eat today (May 2022)

MrsT also brought home some fancy-schmancy cupcakes, but no pics. One was a wedding cake cupcake (pure white all over), one was a peach bomb, and my favorite one was a peanut butter caramel one.
 
There's a new-ish Food Truck two towns up from us and I had posted on another social media site about their Dinner Plate sized Apple fritters and the Breakfast Burrito that we shared.
One of the Groups members suggested that I try their BBQ Pork Ribs next.

6 Bones of yumminess and a double side of Loaded Potato Salad.

I made a pan of Cornbread, some Coleslaw and Baked Beans to go with.
The ribs had been smoked for 9 hours and the bones just fell away as I went serve, so I just pulled the meat a bit and plated up

We have more than enough for another meal!
I weighed the Pulled Rib Meat, and it was a bit more than 3/4 pound!!!
 
Today didn't work out as planned so

Lunch ended up at a restaurant



And evening meal was a baked potato with a vegan smoked mozzarella I found at the back of our fridge, a burger and the remains of the vegan cheese sauce from the macaroni and cheese we had last night. (Cheese sauce was still in the microwave at this point).
Curiously hubby asked me if I wanted strawberries with our evening meal! Apparently my confused look made him add instead of popcorn. That didn't help with the "no context"...
I declined. Somehow strawberries just don't seem to really work with smoked mozzarella on a baked potato. Is it just me?

As I said elsewhere, its been one of those days...

I know it's not winter yet, but we're officially the coldest place in Australia at the moment (Tasmania is often warmer then here when we get these cold fronts because of our altitude,) so we've officially given up and lit the woodburner. It was just below 0°C, similar the previous 2 or 3 nights and going to be colder on Sunday night... yeah time to accept that no heating at 0°C with an upcoming operation probably isn't the best option.

If he wants popcorn or strawberries on spuds, then so be it. I'll keep mine on the side! Lol
 
More ricotta! Some way past its use by date mixed peel, some "Jeez, can't leave it at that price!" ricotta, some nearing use by date cannoli shells (Mrs Veed refuses point blank to let me make my own, formed round a broom handle or some spare metal pipe), some cheap Lidl triple sec, some sweet orange essential oil (not shown here), some vanilla-infused sugar, and we have "fill it yourself when you fancy one" cannoli.

As someone who struggles mightily with cakes…I’m jealous!

The key to cakes and baking imho is having good recipes, because they're required to be followed exactly. If you don't have good recipes or don't know what to look for, or have an oven with it's own ideas, then it's not going to work without a fault on your part.

I've only gotten good at cakes since I have good recipes that work for my oven. I still need to find the same with breads, so I understand your predicament. Also, you seem to be very good at breads which I am not, lol.
