Brunch, a three egg scramble with pan fried diced potatoes and shredded cheese. No photo -- this is a dish that tastes great, but looks ugly.

Afternoon, Low sodium ham and Swiss cheese sammich with lightly salted Lay's potato chips.

I'm not sure how the name of this soup came about, but it's from an American cookbook we have. I adlibbed on the old bay seasoning (chili, paprika, mustard seeds, bay leaves, cloves, green cardamom + fennel seeds instead of celery salt, all ground together in the spice blender). Added in some nori seaweed at the end and sprinkled with a 3 seaweed mix. The soup is primarily leeks, fennel, mushrooms, snow peas, broad beans, edname beans & tomatoes with white wine, veg stock, garlic, fresh thyme, fresh oregano and some fresh basil. The asparagus was cooked in the soup for good measure.

It was delicious.
 
I believe this was a quick thrown together salad and eggs after work...the colours were adorable. Very much into salads in the last month.

Another day I did a simple chicken and potato roasted meal, and a salad. I cut the whole packed chicken into parts myself. It still is a bit of a struggle, but I made it. The price dictates the need to do so. My boyfriend showed me how to, but it does take a lot of practice. And I can only do it with gloves on. I am murmoring a little prayer of gratitude or alike while doing it.

as promised a finished quiche picture, if I dare say so myself, best so far. Daughter agrees, and had several pieces, which she normally would not. And again baking the same one right now, it is good to carry to work. Filling. And I wanted to use up all of the giant bag of fresh spinach.
Did I mention I have a new lightinh in my kitchen, simple change of fixture, but it is warmer, yellowish-er, I like it a lot, very cozy, it may reflect on the food pictures taken in the evening.

Morel and vegetable risotto. First time she'd seen a real risotto prep. And she assertively asked whether I was going to leave her the leftovers. For dessert, she made some flourless dark chocolate cake which I paired with a 2000 vintage Banyuls. She may be Picky Eater, but she can bake!
