I'm not understanding my dough anymore. It's not browning like it should. I started using diastolic malt in my pizza dough recipe and it's supposed to help with the chew and especially the browning, but it's not for some reason. I had to brush the top with olive oil for the last few minutes just to get it to brown. I'm confused again.
