What did you cook or eat today (November 2024)

I've been craving meatballs lately, so I made some and a marinara sauce. I took some ciabatta lightly toasted it so it would have some texture so I could rub a raw clove of garlic on it get a touch of raw garlic flavor. Cut the meatballs in half and topped them with sauce with mozzarella and provolone and topped with manchego then stuck it in the oven for a few.

Missus Next Door Neighbor was kind enough to bring me back from California (they went to visit family) a few Asian ingredients we can't get here in Cowboyville Arizona.
My way of paying back was to use one of those items in a dish that I shared with them for their linner (late lunch/early dinner).

Hawaii-Style Cold Somen Salad.
I customized it to their taste. I sub'd the Kamaboko for steamed Shrimp that I butterflied.
I promise that the shredded Lettuce and Somen Noodles are under there.
I wanted them to give this dish a try, so I made a smaller portion size than what I would make for us two.
DH was looking at the finished product, whining, "where's mine?"
We just had this not so long ago bud.

I've never really managed to make one that in happy with. Could i have the recipe please?
I finely chop a third of the mushrooms and put them in the pan at the onion frying stage, the other two thirds I cut larger and fry seperately at the end. I then mix half of this through the finished rice with the parmasan, then scatter the rest over the top on serving. Other wise the risotto is just the standard onion, garlic, white wine and stock.
Today I used a punnet of 'mixed exotic' and a punnet of small portabello from the supermarket.
 
Used the leftover fajitas from our early dinner out Wednesday and added half a red bell pepper sliced in strips since I had picked them out at the restaurant, don't like greens, and made dinner. There was a lot leftover, Craig had 4, I had 2.5 of the pictured and the pugs got the steak that was left in it after I picked it out. Oh, added some chunked avocado.
