Traditional Catalan coca d'escalivada, known in some places as coca de recapte (which means, literally, leftovers flatbread)

I have been recently on holidays and I have spent the last two weeks busy catching up with everything. Hence my long absence in this forum.

Great to see you back. Hope you had a good holiday. Your coca d'escalivada remind me of the French pissaladière.

We make a stuffed baked potato at the shop and are left with empty skins after every batch..we throw them out most of the time, but every so often I bring a few home and stuff them with ...uhm...stuff.....here's a pic before we drowned them in garlic aioli...

I haven't had stuffed potato skins in years. I need to correct that.

That’s only happened a few times in my adult life. For the past 7 years I’ve gone away to get a break, sometimes with my partner & sometimes with friends but if I’m at home things generally fall to me, especially kitchen things.

I now have a grown daughter who would make a cake for me but between Covid lockdown, work & study she’s struggling so I didn’t ask or expect it.
 
I buy my tamales, too. I have a friend who is Mexican, and his mother makes tamales a few times a year, and I always buy a couple dozen. They vacuum seal and freeze well. There is no possible way I could make better tamales than she makes, so I don't even think about trying.

I’m a bit jealous of this tamale buying.


If I wanted them here I’d have to drive myself bonkers sourcing the masa & the corn husks before I I could even start researching recipes.

We love all Mexican and TexMex flavours and when I cater my daughters birthday gatherings these would be extremely handy.
 
Leftover casserole /beef,sweet potato,aubergine,paprika with quick polenta/rice flour side.
Hot dogs for kid, before and after her volleyball training, half a city across.

Just the right amount of bread bun for her, but the Dogs are looking funny uncovered. Bit of ketchup.

Possibly not the right kind of bun for a hot dog, but it fed her nicely,she was happy, so,perfect.😊😎

The buns came in a two pack. It could be just right that the second bun is used next time tomorrow for the next training.

Today's meal was a breaded chicken layered salad.

The salad included Romaine lettuce, onion, pea shoots, celery, tomato, breaded chicken pieces, thousand island dressing, Parmesan/Romano grated cheese and basil.
 
Knockwurst and German potato salad, along with some bread-n-butter pickles on the side (and some actual bread and butter):

Usually, when I make warm potato salad like that, it has that typical vinegar-and-sugar dressing, but this one is vinegar and beef broth, which is nice, too.
