What did you cook today? (2014)

Breakfast and lunch were cereal. I don't feel like making anything and haven't been particularly hungry so I have been keeping it really easy and simple. For dinner I made pork chops, garlic mashed potatoes and a warm beet salad. I didn't eat too much of it but everyone else seemed to enjoy it.
 
I haven't cooked however I did put 2 filled Yorkshire puddings into the oven. Instructions were gas mark 4 for 25 mins, with our old cooker that didn't work so it was gas 5, we have a new cooker so gas mark 5 for 25 mins, they were well cooked to the point of almost burned. I haven't used this cooker much but lesson learned :confused: it cooks more efficiently than our old one.
 
I had a grilled cheese for lunch yesterday, skipped breakfast, and a grilled veggie burrito for dinner. The burrito was a splurge because the tortilla has so many calories but I was able to squeeze so many servings of veggies into the burrito it was worth it. I grilled tomatoes (these were out of this world), peppers, onions, mushrooms and zucchini and they were all delicious. I added a little salsa as a low fat and calorie sauce.
 
just ran up something to load us up with carbs & protein because we are off on a overnight cycling tour tomorrow morning and don't think the diet I am on would have helped me tomorrow...

So its our standard meal number 1... fry an onion & some nuts (pinenuts) & garlic, add some beans (in this case runner beans, French beans, broad peas * some peas) add a tin of chopped tomatoes plus another tin full of water, add the pasta cover and cook for 10 mins then I added the puy lentils which had been cooking in another pan (unusual for this recipe but I'm at home tonight so had the option of a 2nd pan) and serve. It is never the same, always tastes different but its a one pot meal (suitable for a camping stove) that is great for cycling on and easy to do...
 
Hmm...haven't made anything all day, and starting to think this was a big mistake. Trying to save money by only eating sparsley, but I think I might have to go put some chicken kievs on and just wolf them down, even though it's late.
 
I've been pretty lazy today. I slept so late so breakfast wasn't really needed, so I just heated up some leftovers for lunch. For dinner I made spaghetti with homemade meatballs and broccoli rabe. Everything was very good but I think it was a little too heavy for a summer meal.
 
Did up an Indian for our evening meal today (onion, potato, sweet potato, red lentils, tomato, loads of spices and tamarind which I always make up fresh from the dates) and have a batch of cashew nut cheese now maturing in the dehydrator which is being used as a low temp oven
 
Delisious and simple apple pie in my Redmond multi-cooker. If anybody wants a recipe, I'm ready to share. It takes like 60-65 minutes to make it, and around 10 minutes to prepare all ingredients. It's an ideal choice for busy ones, who wants to have home made yummi pies and save time as well.
 
I made a warm pasta salad for dinner. I boiled some mini penne and mixed it with small shrimp, diced cucumber, dill and a little bit of mayo. I am not a big mayo fan but thought I needed a little something to hold it all together. I then diced some tomato and green pepper and put them on the side for people to add if they wanted some more veggies.
 
I made Chili dogs last night, not the most exquisite thing I've ever made, but really tasty. My chili could have done with cooking off a bit longer to let more water out.

Oh well, you learn every time you cook, I suppose!
 
Last night for dinner I grilled chicken breasts and made a lemon herb sauce to go with it. The sauce was delicious because it was very thin but flavorful and I got to use a lot of my fresh herbs which I always love to use in my cooking. I paired this with artichokes, I was deciding between artichokes or pretty much anything else..I know some people who passionately dislike them...but was pleased with my choice because it seemed like a nice addition to the meal and really rounded it out.

This is my creamy tomato and spinach pasta :)

It's one of the easiest and quickest meals I make (I love this because while I love cooking, I don't particularly like standing over an oven/stove for a massively long period of time), but so delicious!
